Ingredients

  • 200g lentils
  • 2 tablespoons vegetable oil
  • 1 onion, chopped
  • 2 garlic cloves, minced
  • 1 tablespoon grated ginger
  • 1 tablespoon curry powder
  • 1 teaspoon cumin
  • ½ teaspoon turmeric
  • 1 carrot, diced
  • 1 potato, diced
  • 100g frozen peas
  • 1 liter vegetable broth
  • 200ml coconut milk
  • Salt and pepper to taste
  • Fresh cilantro for garnishing

Instructions

  1. Start by rinsing 200g of lentils in cold water and set aside.
  2. In a large pot, heat 2 tablespoons of vegetable oil over medium heat.
  3. Add 1 chopped onion, 2 minced garlic cloves, and 1 tablespoon of grated ginger. Sauté until onions are translucent.
  4. Stir in 1 tablespoon of curry powder, 1 teaspoon of cumin, and ½ teaspoon of turmeric, cooking for another minute to release the spices' aroma.
  5. Add the lentils, 1 carrot diced, 1 potato diced, and 100g of frozen peas to the pot.
  6. Pour in 1 liter of vegetable broth and bring to a boil.
  7. Reduce heat to low and simmer for 25-30 minutes, or until lentils are tender.
  8. Stir in 200ml of coconut milk and season with salt and pepper to taste.
  9. Serve hot, garnished with fresh cilantro.
