Ingredients

  • 1 cup lentils
  • 2 tablespoons olive oil
  • 1 onion, chopped
  • 2 garlic cloves, minced
  • 1 teaspoon ground cumin
  • 1 teaspoon ground cinnamon
  • 4 cups vegetable broth
  • 1 cup carrots, chopped
  • 1/2 cup dried apricots, chopped
  • Salt and pepper to taste
  • Fresh cilantro for garnish

Instructions

  1. Begin by rinsing 1 cup of lentils under cold water. Set aside.
  2. In a large pot, heat 2 tablespoons of olive oil over medium heat.
  3. Add 1 chopped onion, 2 minced garlic cloves, and sauté until translucent.
  4. Stir in 1 teaspoon of ground cumin, 1 teaspoon of ground cinnamon, and cook for 1 minute.
  5. Add the lentils, 4 cups of vegetable broth, and 1 cup of chopped carrots.
  6. Bring to a boil, then reduce the heat and simmer for 25 minutes until the lentils are tender.
  7. Incorporate 1/2 cup of chopped dried apricots into the soup.
  8. Season with salt and pepper to taste.
  9. Top with fresh cilantro before serving.
  10. Serve warm and enjoy!
