Miso Shirataki Noodle Soup

Ingredients

  • 200g shirataki noodles
  • 4 cups water
  • 2 tablespoons miso paste
  • 150g bok choy, chopped
  • 2 large eggs
  • 1 green onion, sliced (optional)

Instructions

  1. In a pot, bring 4 cups of water to a boil.
  2. Add shirataki noodles and cook for about 2-3 minutes. Strain and set aside.
  3. In the same pot, add miso paste to 2 cups of boiling water to create the broth. Stir until well mixed.
  4. Add sliced bok choy to the miso broth and simmer for 3-4 minutes until tender.
  5. Meanwhile, prepare the soft-boiled eggs by boiling them for 6-7 minutes, then placing them in cold water. Peel and set aside.
  6. To serve, place the shirataki noodles in a bowl, pour the miso broth over them, and top with bok choy and halved soft-boiled eggs.
  7. Garnish with green onions if desired. Serve hot.
