Mediterranean Olive & Herb Chicken Soup Recipe

Ingredients

  • 1 tablespoon olive oil
  • 1 cup roasted red peppers, diced
  • 2 cloves garlic, minced
  • 6 cups chicken broth
  • 2 cups shredded cooked chicken
  • 1 cup black olives, sliced
  • 1 teaspoon dried oregano
  • Salt and pepper to taste

Instructions

  1. In a large pot, heat a tablespoon of olive oil over medium heat.
  2. Add diced roasted peppers and cook for 2-3 minutes, until soft.
  3. Add minced garlic, cook for another minute, stirring frequently.
  4. Pour in 6 cups of chicken broth, followed by shredded cooked chicken.
  5. Add in sliced black olives and a teaspoon of dried oregano.
