Ingredients

  • 2 tablespoons olive oil
  • 1 onion, chopped
  • 2 garlic cloves, minced
  • 1 teaspoon smoked paprika
  • 1 teaspoon cumin
  • 400g canned chickpeas, drained and rinsed
  • 400g canned diced tomatoes
  • 750ml vegetable broth
  • Salt and black pepper to taste
  • Fresh herbs (parsley or cilantro)
  • Juice of half a lemon

Instructions

  1. In a large pot, heat 2 tablespoons of olive oil over medium heat.
  2. Add 1 chopped onion and sauté until translucent, about 5 minutes.
  3. Stir in 2 minced garlic cloves, 1 teaspoon of smoked paprika, and 1 teaspoon of cumin, and cook for another minute.
