Ingredients

  • 500g ground beef
  • 1 cup breadcrumbs
  • 1 egg
  • 1 cup diced onions
  • 1 cup diced celery
  • 1 cup diced carrots
  • 2 cloves minced garlic
  • 1 can (400g) diced tomatoes
  • 4 cups beef broth
  • 1 can (400g) kidney beans, drained and rinsed
  • 250g pasta shells
  • Salt and pepper, to taste
  • 1/2 cup grated Parmesan cheese (for serving)
  • Fresh basil leaves, for garnish

Instructions

  1. In a large pot, sauté diced onions, celery, and carrots over medium heat until softened.
  2. Add minced garlic and cook for an additional minute.
  3. Stir in diced tomatoes and their juices, followed by the broth and beans.
  4. Bring the mixture to a simmer and let it cook for 10 minutes.
  5. Meanwhile, mix ground beef, breadcrumbs, egg, minced parsley, salt, and pepper in a bowl to form the meatballs.
  6. Roll small portions of the mixture into meatballs.
  7. Add the meatballs to the simmering soup, cooking for another 10 minutes.
  8. Stir in the pasta shells and cook until tender, about 8-10 minutes.
  9. Season with salt, pepper, and fresh basil leaves to taste.
  10. Serve hot, garnished with grated cheese and additional basil.
