Ingredients

  • 2 tablespoons olive oil
  • 1 onion, chopped
  • 1 bell pepper, chopped
  • 2 celery stalks, chopped
  • 3 cloves garlic, minced
  • 1 pound chicken breast, diced
  • 1 pound smoked sausage, sliced
  • 1 can diced tomatoes (400g)
  • 4 cups chicken broth
  • 2 cups okra, sliced
  • 2 teaspoons Cajun seasoning
  • Salt and pepper, to taste
  • Green onions, for garnish
  • Rice, for serving

Instructions

  1. In a large pot, heat olive oil over medium heat. Add chopped onions, bell peppers, and celery, sautéing for about 5 minutes until softened.
  2. Add garlic and cook for an additional minute until fragrant.
