Ingredients

  • 400ml coconut milk
  • 2 tablespoons curry paste
  • 600ml water
  • 200g fish cakes
  • 150g tofu puffs
  • 200g rice noodles
  • 100g bean sprouts
  • Salt to taste
  • Juice of 1 lime
  • Chili flakes to taste
  • Fresh cilantro for garnish
  • Lime wedges for serving

Instructions

  1. Start by preparing the broth by simmering coconut milk with curry paste and water in a large pot over medium heat.
  2. Add fish cakes and tofu puffs to the broth and simmer for about 10 minutes.
  3. Meanwhile, cook rice noodles according to package instructions, then drain and set aside.
