Ingredients

  • 1 pound (450g) ground beef
  • 1 diced onion
  • 2 minced garlic cloves
  • 4 cups (1L) beef broth
  • 2 cups (300g) diced potatoes
  • 1 cup (150g) corn
  • 2 cups (200g) shredded cheddar cheese
  • 1 cup (150g) diced pickles
  • 6 strips of bacon, crumbled
  • Salt and pepper, to taste
  • Fresh tomatoes, for garnish

Instructions

  1. In a large pot, brown 1 pound (450g) of ground beef over medium heat until cooked through. Drain excess fat.
  2. Add 1 diced onion and 2 minced garlic cloves, cooking until softened.
  3. Pour in 4 cups (1L) of beef broth and bring to a simmer.
  4. Stir in 2 cups (300g) diced potatoes, 1 cup (150g) corn, and season with salt and pepper.
  5. Let the mixture simmer until vegetables are tender, about 15 minutes.
  6. Add 2 cups (200g) shredded cheddar cheese and stir until melted and creamy.
  7. Fold in 1 cup (150g) of diced pickles and 6 strips of crumbled bacon.
