Ingredients

  • 1 cup lentils
  • 2 tablespoons olive oil
  • 1 onion, chopped
  • 2 garlic cloves, minced
  • 1 carrot, diced
  • 4 cups vegetable broth
  • Zest of 1 lemon
  • Juice of 1 lemon
  • 1 teaspoon salt
  • 1/4 cup fresh parsley, chopped

Instructions

  1. Rinse 1 cup of lentils thoroughly under cold water until the water runs clear.
  2. In a large pot, heat 2 tablespoons of olive oil over medium heat.
  3. Add 1 chopped onion, 2 minced garlic cloves, and 1 diced carrot; sauté until softened, about 5-7 minutes.
  4. Add the rinsed lentils to the pot, along with 4 cups of vegetable broth.
  5. Stir in the zest of 1 lemon, juice of 1 lemon, and 1 teaspoon of salt; bring to a boil.
  6. Reduce heat, cover, and let it simmer for 25-30 minutes, or until the lentils are tender.
  7. In the last few minutes of cooking, stir in 1/4 cup of chopped fresh parsley.
  8. Adjust seasoning with more salt and pepper if needed before serving.
