Hearty Lentil and Sweet Potato Stew

Ingredients

  • 1 cup lentils
  • 2 medium sweet potatoes
  • 1 onion
  • 2 garlic cloves
  • 2 tablespoons olive oil
  • 1 teaspoon cumin
  • 4 cups vegetable broth
  • Salt and pepper to taste
  • Fresh cilantro for garnish

Instructions

  1. Rinse 1 cup of lentils under cold water.
  2. In a large pot, heat 2 tablespoons of olive oil over medium heat.
  3. Add 1 chopped onion and 2 minced garlic cloves, sauté until fragrant.
  4. Stir in 1 teaspoon of cumin and cook for an additional minute.
  5. Add the rinsed lentils and 4 cups of vegetable broth to the pot.
  6. Peel and dice 2 medium sweet potatoes, and add them to the pot.
