Ingredients

  • 2 tablespoons olive oil
  • 1 chopped onion
  • 2 diced carrots
  • 2 minced garlic cloves
  • 1 teaspoon ground cumin
  • 1 teaspoon coriander
  • 1/2 teaspoon turmeric
  • 1 cup lentils
  • 4 cups vegetable broth
  • 4 cups fresh spinach
  • Salt and pepper to taste

Instructions

  1. In a large pot, heat 2 tablespoons of olive oil over medium heat.
  2. Add 1 chopped onion, 2 diced carrots, and 2 minced garlic cloves. Sauté until the vegetables are tender.
  3. Stir in 1 teaspoon of ground cumin, 1 teaspoon of coriander, and 1/2 teaspoon of turmeric; cook for an additional minute.
  4. Add 1 cup of rinsed lentils and 4 cups of vegetable broth; bring to a boil.
  5. Reduce heat and simmer for about 20 minutes or until lentils are tender.
  6. Add 4 cups of fresh spinach and stir until wilted.
  7. Season with salt and pepper to taste before serving.
