Ingredients

  • 2 cups lentils, rinsed
  • 1 tablespoon olive oil
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 2 carrots, diced
  • 1 bell pepper, diced
  • 1 can (400g) diced tomatoes
  • 4 cups vegetable broth
  • 1 teaspoon dried Italian herbs
  • Salt and pepper to taste
  • Plant-based parmesan for serving
  • Fresh basil for garnish

Instructions

  1. In a large pot, heat olive oil over medium heat. Add chopped onion, garlic, and celery. Sauté until softened, about 5 minutes.
  2. Add diced carrots and bell pepper to the pot, stirring occasionally for an additional 5 minutes.
  3. Stir in the lentils, diced tomatoes, broth, and Italian herbs. Bring to a boil.
  4. Reduce heat to low and let it simmer, covered, for about 30 minutes or until lentils are tender.
