Ingredients

  • 1 tablespoon olive oil
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 2 carrots, diced
  • 2 celery stalks, diced
  • 1 teaspoon turmeric powder
  • Salt, to taste
  • Pepper, to taste
  • 4 cups chicken broth
  • 1 cup quinoa, rinsed
  • 2 cups cooked shredded chicken
  • Juice of 1 lemon
  • Lemon slices, for garnish
  • Fresh dill, for garnish

Instructions

  1. In a large pot, heat a tablespoon of olive oil over medium heat.
  2. Add chopped onions and garlic. Sauté until softened and translucent.
  3. Stir in diced carrots and celery, cooking for an additional 5 minutes.
  4. Add the turmeric, salt, and pepper, cooking for 1 minute to release the aromas.
  5. Pour in the chicken broth and bring to a boil.
  6. Once boiling, add quinoa and shredded chicken, reducing heat to a simmer.
  7. Let it simmer for 15 minutes until quinoa is cooked and flavors marry.
  8. Adjust seasoning and add fresh lemon juice to taste.
