Ingredients

  • 1 tablespoon olive oil
  • 3 cloves garlic, minced
  • 4 cups vegetable broth
  • 1 cup quinoa, rinsed
  • 4 cups kale, chopped
  • Juice of 2 lemons
  • Salt and pepper to taste

Instructions
