Hearty Lamb & Barley Stew with Root Vegetables

Ingredients

  • 500 grams lamb shoulder, cubed
  • 2 tablespoons olive oil
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 3 carrots, diced
  • 2 parsnips, diced
  • 150 grams pearl barley
  • 1 liter beef broth
  • 2 bay leaves
  • 1 teaspoon dried thyme
  • Salt and pepper to taste

Instructions

  1. In a large pot, heat some oil over medium heat. Add cubed lamb and brown on all sides.
  2. Add chopped onions and garlic, cooking until softened.
  3. Stir in diced carrots, parsnips, and other root vegetables.
  4. Add pearl barley and stir to combine with the other ingredients.
  5. Pour in beef broth and add bay leaves, thyme, salt, and pepper.
  6. Bring to a boil, then reduce heat to low, cover, and simmer for about 1.5 to 2 hours until lamb is tender.
  7. Remove bay leaves before serving. Adjust seasoning if necessary.
  8. Serve warm with crusty bread on the side.
