Ingredients

  • 800 grams heirloom tomatoes, chopped
  • 1 medium onion, chopped
  • 2 cloves garlic, minced
  • 1 red bell pepper, chopped
  • 750 milliliters vegetable broth
  • 2 tablespoons olive oil
  • Salt, to taste
  • Pepper, to taste
  • Fresh basil leaves, for garnish
  • Croutons, for serving

Instructions

  1. Gather all ingredients and prep them accordingly.
  2. In a large pot, heat olive oil over medium heat.
  3. Add chopped onions and garlic, sauté until translucent.
  4. Add chopped heirloom tomatoes and red bell peppers, cook for about 10 minutes.
  5. Pour in vegetable broth and bring to a simmer.
  6. Add fresh basil leaves, salt, and pepper, simmer for 15 minutes.
  7. Using an immersion blender, blend the soup until smooth.
