Spicy Kimchi Jjigae: A Hearty Korean Stew for Any Occasion

Ingredients

  • 200g pork belly
  • 300g kimchi
  • 1 tablespoon gochujang
  • 600ml water
  • 250g tofu
  • Salt to taste
  • Pepper to taste
  • 1 tablespoon oil
  • Green onions for garnish (optional)

Instructions

  1. In a large pot, heat up 1 tablespoon of oil over medium heat.
  2. Add 200g of pork belly, sauté until browned.
  3. Stir in 300g of chopped kimchi and cook for 5 minutes.
  4. Add 1 tablespoon of gochujang and mix well.
  5. Pour in 600ml of water and bring to a boil.
  6. Add 250g of cubed tofu and simmer for 10 minutes.
  7. Season with salt and pepper to taste.
  8. Serve hot, garnished with green onions if desired.
