Ingredients

  • 2000 g pork bones
  • 1 onion
  • 1 head garlic
  • 1 thumb-sized piece ginger
  • 100 ml soy sauce
  • 50 ml mirin
  • 100 ml water
  • 300 g ramen noodles
  • 200 g pork belly
  • 2-4 eggs
  • Chopped green onions
  • Nori sheets

Instructions

  1. Begin by preparing the broth. In a large pot, add 2 kg of pork bones and cover with water. Bring to a boil and simmer for 12 hours.
  2. After 12 hours, strain the broth and return it to the pot. Add 1 onion, 1 head of garlic, and a thumb-sized piece of ginger, then simmer for another hour.
  3. In the meantime, marinate the eggs by combining 100 ml of soy sauce, 50 ml of mirin, and 100 ml of water in a bowl. Place the soft-boiled eggs in the mixture for at least 30 minutes.
  4. Cook the ramen noodles according to package instructions and set aside.
  5. In a pan, sear slices of pork belly until crispy, seasoning with salt and pepper.
  6. Assemble your bowl by adding a portion of noodles, Ladling hot broth over them, topped with 2-3 slices of pork belly, marinated eggs, chopped green onions, and a sheet of nori.
  7. Serve immediately, garnished with any additional toppings you desire.
