Creamy Spinach Paneer Soup

Ingredients

  • 200 g fresh spinach
  • 150 g paneer
  • 1 medium onion, chopped
  • 2 cloves garlic, minced
  • 1-2 green chilies, chopped
  • 1 tsp cumin seeds
  • 1/2 cup cream
  • Salt, to taste
  • Black pepper, to taste
  • Oil or butter, for cooking

Instructions

  1. Wash and chop the spinach leaves. Blanch them in boiling water for 2-3 minutes, then drain and set aside.
  2. In a blender, puree the blanched spinach adding a little water for a smooth consistency.
  3. In a pan, heat some oil or butter. Add cumin seeds, chopped onions, and sauté until the onions are translucent.
  4. Add minced garlic and green chilies to the pan, cooking for another minute until fragrant.
  5. Pour in the spinach puree, stirring well to combine, and bring to a gentle simmer.
  6. Add cream, salt, and pepper to taste, allowing it to thicken for a few minutes.
  7. Meanwhile, cut paneer into cubes and fry them in a separate pan until golden brown.
  8. Serve the creamy spinach soup hot, garnished with fried paneer cubes and a swirl of cream.
