Ingredients

  • 450g cooked lobster meat, chopped
  • 4 tablespoons unsalted butter
  • 1 medium onion, diced
  • 2 celery stalks, diced
  • 1 large carrot, diced
  • 3 garlic cloves, minced
  • 2 tablespoons tomato paste
  • 4 cups lobster stock
  • 2 bay leaves
  • 1 teaspoon dried thyme
  • 1 cup heavy cream
  • 1/4 cup dry sherry
  • Salt and pepper, to taste

Instructions

  1. Begin by gathering all your ingredients and tools to ensure a smooth cooking experience.
  2. In a large pot, melt butter over medium heat. Add diced onions, celery, and carrots; sauté until softened.
  3. Add minced garlic and cook until fragrant, about 1 minute.
