Ingredients

  • 2 tablespoons olive oil
  • 1 kg cubed beef
  • 1 chopped onion
  • 3 cups beef broth
  • 2 cups chopped carrots
  • 2 cups diced turnips
  • 2 cups diced potatoes
  • Salt to taste
  • Pepper to taste
  • 2 teaspoons dried thyme

Instructions

  1. In a large pot, heat 2 tablespoons of olive oil over medium heat.
  2. Add 1 kg of cubed beef and brown on all sides, about 5-7 minutes.
  3. Remove the beef and set aside. In the same pot, add 1 chopped onion and sauté until translucent.
  4. Return the beef to the pot and add 3 cups of beef broth, 2 cups of chopped carrots, 2 cups of diced turnips, and 2 cups of diced potatoes.
  5. Season with salt, pepper, and 2 teaspoons of dried thyme.
  6. Bring to a boil, then reduce heat to low, cover, and simmer for 1.5-2 hours, until the beef is tender.
  7. Adjust seasoning if necessary and serve warm.
