Harvest Moon Wild Mushroom & Farro Soup

Ingredients

  • 2 tablespoons olive oil
  • 1 medium onion, diced
  • 2 cloves garlic, minced
  • 500g wild mushrooms, sliced
  • 1 liter vegetable broth
  • 200g cooked farro
  • 2 teaspoons dried thyme
  • 50ml sherry
  • Salt and pepper to taste

Instructions

  1. In a large pot, heat olive oil over medium heat. Add diced onion and sauté until translucent, about 5 minutes.
  2. Add minced garlic, cooking for another minute until fragrant.
  3. Stir in the sliced wild mushrooms and continue to sauté for 5-7 minutes until they start to soften.
  4. Pour in the vegetable broth and bring to a simmer.
  5. Add cooked farro, thyme, and a splash of sherry; stir to combine.
  6. Season with salt and pepper to taste, and let simmer for another 10-15 minutes.
  7. Garnish with fresh thyme sprigs before serving. Enjoy warm!
