Traditional Harira: Moroccan Lentil and Chickpea Soup

Ingredients

  • 2 tablespoons olive oil
  • 1 large onion, chopped
  • 3 cloves garlic, minced
  • 2 celery stalks, diced
  • 2 carrots, diced
  • 400g canned diced tomatoes
  • 200g lentils, rinsed
  • 400g canned chickpeas, rinsed
  • 1 liter vegetable broth
  • 1 teaspoon ground ginger
  • 1 teaspoon ground cinnamon
  • 1 teaspoon turmeric
  • Black pepper, to taste
  • Salt, to taste
  • Fresh cilantro and parsley, chopped

Instructions

  1. In a large pot, heat oil over medium heat; add chopped onions and sauté until translucent.
  2. Add minced garlic, celery, and carrots, cooking until softened.
  3. Stir in diced tomatoes, and cook for a few minutes until the mixture thickens.
  4. Add in lentils, chickpeas, and vegetable broth, stirring well.
  5. Season with ginger, cinnamon, turmeric, and black pepper; bring to a boil.
  6. Reduce heat and let simmer for 30-40 minutes, or until lentils are tender, stirring occasionally.
  7. In the last 10 minutes of cooking, add chopped cilantro and parsley for freshness.
  8. Taste and adjust seasoning with salt as needed.
  9. Serve hot, garnished with a sprinkle of herbs and lemon wedges on the side.
