Ingredients

  • 300 grams fresh green peas
  • 1 tablespoon olive oil
  • 1 onion, chopped
  • 2 garlic cloves, minced
  • 800 milliliters vegetable broth
  • 1 handful fresh mint leaves
  • Salt to taste
  • Pepper to taste

Instructions

  1. Start by washing 300 grams of fresh green peas under cold water and set them aside.
  2. In a large pot, heat 1 tablespoon of olive oil over medium heat.
  3. Add 1 chopped onion and 2 minced garlic cloves, sautéing until the onion becomes translucent.
  4. Add the fresh green peas and stir well, cooking for about 2 minutes.
  5. Pour in 800 milliliters of vegetable broth and bring to a boil.
  6. Reduce heat and let the mixture simmer for about 15 minutes or until peas are tender.
  7. Add a handful of fresh mint leaves and blend the mixture until smooth, either using an immersion blender or a countertop blender.
