Ingredients

  • 500g carrots
  • 50g ginger
  • 50g turmeric
  • 1 large onion
  • 3 cloves garlic
  • 1L vegetable broth
  • 200ml coconut milk
  • Salt and pepper to taste
  • Fresh herbs for garnish

Instructions

  1. Begin by gathering all your ingredients: carrots, ginger, turmeric, onion, garlic, vegetable broth, coconut milk, and seasonings.
  2. Peel and chop the carrots into small pieces for even cooking.
  3. Grate the ginger and turmeric or peel and finely chop them.
  4. In a large pot, sauté diced onion and minced garlic in a little oil until soft.
  5. Add the chopped carrots, turmeric, and ginger to the pot, and sauté for a few minutes.
  6. Pour in the vegetable broth and bring to a boil. Reduce heat and let it simmer until the carrots are tender.
  7. Once cooked, use an immersion blender to blend the soup until smooth, or transfer to a blender in batches.
  8. Stir in the coconut milk and heat gently without boiling.
  9. Season with salt and pepper to taste, adjusting according to preference.
