Ingredients

  • 1 tablespoon olive oil
  • 1 large onion, chopped
  • 2 cloves of garlic, minced
  • 400g bratwurst, sliced
  • 500g sauerkraut, drained
  • 500g potatoes, diced
  • 1 liter vegetable broth
  • 1 teaspoon caraway seeds
  • Salt and pepper to taste
  • 300g carrots, sliced
  • Fresh parsley for garnish
  • Mustard for serving

Instructions

  1. In a large pot, heat olive oil over medium heat. Add chopped onions and garlic, sautéing until translucent.
  2. Add sliced bratwurst and cook until browned.
  3. Stir in the sauerkraut and potatoes, mixing well.
  4. Pour in the vegetable broth and season with caraway seeds, salt, and pepper.
  5. Bring to a boil, then reduce heat and simmer for 30-40 minutes, or until potatoes are tender.
  6. Add sliced carrots and continue cooking for an additional 10-15 minutes.
  7. Serve warm, garnished with fresh parsley and with mustard on the side.
