Ingredients

  • 2 tablespoons olive oil
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 bulb fennel, chopped
  • 2 tomatoes, chopped
  • 1/4 teaspoon saffron threads
  • Zest of 1 orange
  • 4 cups fish stock or water
  • 500g mixed white fish (cod, haddock, monkfish)
  • 250g mussels, cleaned
  • Salt and pepper to taste
  • Juice of 1 lemon
  • Crusty bread for serving
  • Rouille for serving
