Ingredients

  • 2 chicken breasts (about 500g)
  • 2 cups sweet corn (fresh or frozen)
  • 1 red bell pepper, diced
  • 4 cups chicken broth
  • 1 tablespoon olive oil
  • Salt and pepper to taste
  • Fresh cilantro for garnish

Instructions

  1. Cook the BBQ chicken: Grill or bake chicken breast until fully cooked and then shred.
  2. In a large pot, heat 1 tablespoon of oil over medium heat.
  3. Add 1 diced red bell pepper and sauté until soft, about 5 minutes.
  4. Stir in 2 cups of sweet corn (fresh or frozen) and cook for another 2 minutes.
  5. Pour in 4 cups of chicken broth and bring to a simmer.
  6. Add the shredded BBQ chicken and let simmer for 10 minutes.
  7. Season with salt and pepper to taste.
