Ingredients

  • 500 grams pork belly
  • 1.5 liters water
  • 1 medium radish
  • 1 medium eggplant
  • 200 grams long beans
  • 1 cup tamarind paste
  • 2 tablespoons fish sauce
  • 100 grams leafy greens
  • Chopped green onions for garnish

Instructions

  1. Start by boiling 1.5 liters of water in a pot.
  2. Add 500 grams of pork belly, cut into chunks, and simmer for about 30 minutes until tender.
  3. In the same pot, add 1 medium radish, sliced; 1 medium eggplant, diced; and 200 grams of long beans, cut into 2-inch pieces.
  4. Add 1 cup of tamarind paste and stir well.
  5. Season with 2 tablespoons of fish sauce and adjust according to taste.
  6. Allow to simmer for an additional 10 minutes until vegetables are cooked through.
  7. Add 100 grams of leafy greens, such as spinach or watercress, and cook for another 2 minutes.
  8. Serve hot, garnished with chopped green onions.
