Eggplant & Tomato Provençal Stew

Ingredients

  • 1 medium eggplant (about 250g)
  • 2 ripe tomatoes (about 300g)
  • 1 bell pepper (any color)
  • 1 medium onion
  • 2 cloves garlic
  • 2 tablespoons olive oil
  • 1 teaspoon herbs de Provence
  • Salt to taste
  • Black pepper to taste
  • Fresh basil for garnish

Instructions

  1. Begin by prepping your ingredients: wash and dice the eggplant, tomatoes, peppers, and onion.
  2. In a large pot, heat 2 tablespoons of olive oil over medium heat.
  3. Add the diced onion and sauté until soft and translucent, about 5 minutes.
  4. Introduce the diced peppers and eggplant to the pot, stirring occasionally for 7-10 minutes.
  5. Stir in the diced tomatoes, garlic, and herbs de Provence. Continue to cook for another 5 minutes.
  6. Season with salt and pepper to taste, and cover the pot. Let it simmer on low heat for 20-30 minutes, stirring occasionally.
  7. Once the vegetables are tender and the flavors melded, remove from heat and garnish with fresh basil.
