Ingredients

  • 300g duck confit
  • 200g Toulouse sausage
  • 400g white beans (soaked overnight)
  • 2 cloves garlic, minced
  • 1 onion, chopped
  • 2-3 bay leaves
  • 500ml water
  • 2 tbsp duck fat
  • Salt and pepper to taste
  • 100g herb breadcrumbs

Instructions

  1. Preheat the oven to 160°C (320°F).
  2. In a large oven-safe pot, combine soaked white beans, garlic, onion, and bay leaves with water and bring to a boil.
  3. Reduce heat and let simmer for 30 minutes until beans are tender but not mushy.
  4. In another skillet, sear Toulouse sausages until browned, then add to the pot with beans.
  5. Add the duck confit to the pot, ensuring it's evenly distributed.
  6. Pour in the duck fat, season with salt and pepper, and give it a gentle stir.
  7. Sprinkle the herb breadcrumbs on top.
  8. Cover the pot and transfer it to the oven; bake for about 2 hours.
  9. Remove the lid during the last 30 minutes for a crispy topping.
  10. Once done, let it cool slightly before serving. Enjoy!
