Ingredients

  • 400g fresh spinach
  • 1 medium zucchini (approximately 200g)
  • 1 bunch of fresh parsley
  • 1 tablespoon olive oil
  • 1 liter vegetable broth
  • Salt to taste
  • Pepper to taste
  • 2 tablespoons pine nuts (for topping)

Instructions

  1. Start by washing and roughly chopping the spinach, zucchini, and parsley.
  2. In a large pot, heat a tablespoon of olive oil over medium heat.
  3. Add the chopped zucchini and cook for about 5 minutes until slightly softened.
  4. Stir in the spinach and cook for another 3 minutes until wilted.
  5. Pour in 4 cups of vegetable broth and bring the mixture to a boil.
