Curried Red Lentil & Coconut Soup

Ingredients

  • 1 cup red lentils
  • 1 tablespoon vegetable oil
  • 1 onion, chopped
  • 2 garlic cloves, minced
  • 1 tablespoon grated ginger
  • 1 tablespoon curry powder
  • 1 teaspoon cumin
  • Pinch of cayenne pepper
  • 1 can (400ml) coconut milk
  • 4 cups vegetable broth
  • Salt and pepper to taste
  • Fresh cilantro for garnish
  • Toasted pine nuts for garnish

Instructions

  1. Rinse 1 cup of red lentils under cold water until the water runs clear.
  2. Heat 1 tablespoon of vegetable oil in a large pot over medium heat.
  3. Add 1 chopped onion, 2 minced garlic cloves, and 1 tablespoon of grated ginger; sauté until softened.
  4. Stir in 1 tablespoon of curry powder, 1 teaspoon of cumin, and a pinch of cayenne pepper; cook until fragrant.
  5. Add the rinsed lentils, 1 can (400ml) of coconut milk, and 4 cups of vegetable broth.
  6. Bring to a boil, then reduce heat and let it simmer for about 20 minutes or until lentils are soft.
  7. Season with salt and pepper to taste.
  8. Blend with an immersion blender for a creamier texture or leave it chunky.
  9. Serve hot, garnished with fresh cilantro, a drizzle of coconut milk, and toasted pine nuts.
