Ingredients

  • 1 tablespoon olive oil
  • 1 onion, diced
  • 2 cloves garlic, minced
  • 1 tablespoon fresh ginger, grated
  • 1 teaspoon ground cumin
  • 1 teaspoon ground coriander
  • 1/2 teaspoon turmeric
  • 1 medium cauliflower, chopped into florets
  • 1 can (400g) chickpeas, drained
  • 1 can (400 mL) coconut milk
  • 2 cups vegetable broth
  • Salt and pepper, to taste
  • Fresh cilantro, for garnish
  • Red pepper flakes, optional for garnish

Instructions

  1. Begin by heating a tablespoon of olive oil in a large pot over medium heat.
  2. Add one diced onion and sauté until translucent, about 5 minutes.
  3. Stir in two cloves of minced garlic and one tablespoon of freshly grated ginger, cooking for an additional minute.
  4. Add one teaspoon of ground cumin, one teaspoon of ground coriander, and half a teaspoon of turmeric, stirring well to coat the onions.
  5. Incorporate one medium cauliflower, chopped into florets, and one can of drained chickpeas, mixing everything together.
  6. Pour in one can (400 mL) of coconut milk and two cups of vegetable broth, bringing the mixture to a simmer.
  7. Season with salt and pepper to taste, cover, and simmer for 20-25 minutes, until the cauliflower is tender.
  8. Using an immersion blender, blend the soup until smooth (or leave it chunky for texture).
  9. Serve hot, garnished with fresh cilantro and a sprinkle of red pepper flakes, if desired.
