Ingredients

  • 500g beef (cut into chunks)
  • 500g chicken (cut into pieces)
  • 250g pork (cut into chunks)
  • 200g yuca (peeled and chopped)
  • 200g malanga (peeled and chopped)
  • 200g sweet potatoes (peeled and chopped)
  • 2 ears of corn (cut into pieces)
  • 2 ripe plantains (peeled and sliced)
  • 1 large onion (chopped)
  • 1 bell pepper (chopped)
  • 4 cloves garlic (minced)
  • Fresh cilantro (for garnish)
  • Salt and pepper to taste
  • Cumin and paprika to taste

Instructions

  1. Start by preparing your sofrito: in a large pot, sauté chopped onions, bell peppers, and garlic until fragrant.
  2. Add diced meats (beef, chicken, or pork) to the pot and brown on all sides.
