Creamy Zucchini & Basil Soup

Ingredients

  • 500g zucchini
  • 1 cup fresh basil
  • 1 tablespoon olive oil
  • 750ml vegetable broth
  • 1 cup cashew cream
  • Salt to taste
  • Pepper to taste
  • Roasted nuts for garnish (optional)

Instructions

  1. Prepare the ingredients: wash and chop 500g of zucchini and 1 cup of fresh basil.
  2. Heat 1 tablespoon of olive oil in a large pot over medium heat.
  3. Add the chopped zucchini and sauté for about 5 minutes until tender.
  4. Pour in 750ml of vegetable broth and bring to a boil.
  5. Reduce heat and let it simmer for 15 minutes.
  6. Remove from heat and add 1 cup of cashew cream and the fresh basil.
  7. Use a blender to blend the soup until smooth and creamy.
  8. Season with salt and pepper to taste, and reheat gently if necessary.
  9. Serve warm, garnished with extra basil leaves and roasted nuts on top.
