Ingredients

  • 2 tablespoons butter
  • 1 onion, diced
  • 2 carrots, diced
  • 2 celery stalks, diced
  • 2 garlic cloves, minced
  • 4 cups chicken or vegetable broth
  • 2 cups shredded leftover turkey
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 teaspoon fresh herbs ( thyme or parsley)
  • 1 cup all-purpose flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt
  • 2 tablespoons fresh herbs
  • 1/2 cup milk
  • 2 tablespoons melted butter
  • 1/2 cup heavy cream

Instructions

  1. In a large pot, melt 2 tablespoons of butter over medium heat. Add diced onions, carrots, and celery. Sauté until vegetables soften, about 5 minutes.
  2. Stir in minced garlic and cook for another minute until fragrant.
  3. Add 4 cups of chicken or vegetable broth and bring to a simmer.
  4. Reduce heat and add shredded leftover turkey, salt, pepper, and any additional herbs of choice. Simmer for 10 minutes.
  5. Meanwhile, prepare the dumpling batter by mixing 1 cup of all-purpose flour, 1 teaspoon baking powder, 1/2 teaspoon salt, and 2 tablespoons finely chopped fresh herbs in a bowl.
  6. In a separate bowl, whisk together 1/2 cup of milk and 2 tablespoons of melted butter. Combine with the dry ingredients until just mixed.
  7. Drop spoonfuls of the dumpling batter into the simmering soup. Cover the pot and cook for 15 minutes without lifting the lid to allow dumplings to steam.
  8. After 15 minutes, check if dumplings are cooked through. Stir in 1/2 cup of heavy cream, and adjust seasoning if necessary. Serve hot, garnished with fresh herbs.
