Creamy Roasted Chestnut & Thyme Soup

Ingredients

  • 500g chestnuts
  • 1 medium onion, chopped
  • 2 garlic cloves, minced
  • 1 tablespoon olive oil
  • 4 cups vegetable broth
  • 1 teaspoon fresh thyme
  • 1 cup heavy cream
  • Salt and pepper, to taste

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Spread the chestnuts on a baking sheet and roast for about 20-25 minutes until they are golden and fragrant.
  3. Once cool, peel and chop the chestnuts.
  4. In a pot, heat olive oil over medium heat and sauté the chopped onion and garlic until translucent.
  5. Add the chopped chestnuts, thyme, and vegetable broth. Bring to a boil and let simmer for 15 minutes.
  6. Use an immersion blender to puree the soup until smooth. Alternatively, transfer in batches to a blender.
  7. Stir in the heavy cream and season with salt and pepper to taste.
  8. Serve hot, garnished with roasted chestnut slices and thyme if desired.
