Ingredients

  • 1 tablespoon olive oil
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 inch ginger, grated
  • 1 teaspoon ground cumin
  • 1 teaspoon ground coriander
  • 1 teaspoon turmeric
  • 400g canned chickpeas, drained
  • 4 cups vegetable broth
  • 400ml coconut milk
  • 200g fresh spinach
  • Salt and pepper, to taste
  • Fresh cilantro, for garnish
  • Coconut cream, for drizzle

Instructions

  1. In a large pot, heat 1 tablespoon of olive oil over medium heat.
  2. Add chopped onion, garlic, and ginger; sauté until the onion becomes translucent.
  3. Stir in the cumin, coriander, and turmeric, cooking for another minute until fragrant.
  4. Add drained chickpeas and vegetable broth; bring to a boil.
  5. Lower the heat and stir in coconut milk; simmer for about 10 minutes.
  6. Add fresh spinach; cook until wilted.
  7. Use an immersion blender to purée the soup to your desired consistency.
  8. Season with salt and pepper to taste before serving.
  9. Garnish with fresh cilantro and a drizzle of coconut cream.
