Ingredients

  • 2 tablespoons butter
  • 1 medium onion, diced
  • 2 cloves garlic, minced
  • 200 grams shiitake mushrooms, sliced
  • 200 grams oyster mushrooms, sliced
  • 200 grams button mushrooms, sliced
  • 2 tablespoons all-purpose flour
  • 1 liter chicken broth
  • 300 ml heavy cream
  • 300 grams rotisserie chicken, shredded
  • Salt and pepper to taste
  • Fresh thyme for garnish

Instructions

  1. In a large pot, melt 2 tablespoons of butter over medium heat.
  2. Add diced onions and cook until translucent, about 5 minutes.
  3. Stir in minced garlic and cook for another minute.
  4. Add sliced shiitake, oyster, and button mushrooms to the pot, cooking until softened (about 7 minutes).
  5. Sprinkle flour over the mushroom mixture and stir well, cooking for 2 minutes.
  6. Gradually pour in chicken broth, stirring constantly to avoid lumps.
  7. Bring the mixture to a simmer, then add cream, cooked rotisserie chicken, and season with salt and pepper.
