Ingredients

  • 2 tablespoons olive oil
  • 1 onion, diced
  • 2 carrots, diced
  • 2 celery stalks, diced
  • 3 cloves garlic, minced
  • 500 grams chicken breast, diced
  • 1 liter chicken broth
  • 400 grams sweet corn (canned or frozen)
  • 300 grams potatoes, diced
  • 250 milliliters heavy cream
  • Salt and pepper to taste
  • Fresh parsley, chopped for garnish

Instructions

  1. In a large pot, heat 1 tablespoon of olive oil over medium heat. Add diced onions, carrots, and celery, sauté until soft.
  2. Stir in minced garlic and cook for another minute until fragrant.
  3. Add diced chicken breast, cooking until no longer pink. Season with salt and pepper.
  4. Pour in chicken broth and bring to a boil.
  5. Add sweet corn and diced potatoes, reduce heat, and let it simmer for 15 minutes.
  6. Stir in heavy cream, allowing the chowder to thicken for about 5 more minutes.
  7. Taste and adjust seasoning as needed. Garnish with chopped parsley before serving.
