Ingredients

  • 2 tablespoons olive oil
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 2 medium potatoes, diced
  • 4 cups chicken broth
  • 2 cups shredded cooked chicken
  • 2 cups fresh broccoli florets
  • 1 cup heavy cream
  • Salt and pepper to taste
  • Herbs (optional, e.g., thyme or parsley)

Instructions

  1. In a large pot, heat 2 tablespoons of olive oil over medium heat. Add chopped onions and garlic, sautéing until they're translucent.
  2. Add diced potatoes to the pot and cook for about 5 minutes, stirring occasionally.
