Ingredients

  • 1 large butternut squash (about 1.5 kg)
  • 2 tablespoons olive oil
  • 1 onion, chopped
  • 3 cloves garlic, minced
  • 2 tablespoons curry powder
  • 4 cups vegetable broth
  • 1 can (400 ml) coconut milk
  • Salt and pepper to taste
  • Fresh cilantro for garnish

Instructions

  1. Preheat your oven to 200°C (400°F).
  2. Peel and cube the butternut squash, then spread it on a baking sheet.
  3. Drizzle olive oil over the squash and season with salt and pepper, tossing to coat.
  4. Roast in the oven for 25-30 minutes, or until the squash is tender and slightly caramelized.
