Ingredients

  • 250g spinach
  • 100g watercress
  • 200g celery
  • 150g green beans
  • 1 tablespoon olive oil
  • 1 liter vegetable broth
  • Salt to taste
  • Pepper to taste
  • Fresh herbs for garnish (e.g., parsley, cilantro)
  • 1 tablespoon sesame seeds (optional)

Instructions

  1. Begin by washing all fresh greens thoroughly under cold water.
  2. Chop the spinach, watercress, celery, and green beans into bite-sized pieces.
  3. In a large pot, add 1 tablespoon of olive oil and heat over medium heat.
  4. Add the chopped celery and green beans, and sauté for about 5 minutes until slightly tender.
  5. Next, stir in the spinach and watercress, cooking for an additional 4-5 minutes.
  6. Pour in 4 cups of vegetable broth and bring to a gentle boil.
  7. Reduce the heat and let it simmer for 10 minutes, allowing all flavors to meld.
