Ingredients

  • 1 tablespoon olive oil
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 400g canned diced tomatoes
  • 400g canned chickpeas, drained
  • 500ml vegetable broth
  • 1 teaspoon cumin
  • 1 teaspoon paprika
  • Salt and pepper, to taste
  • 200g fresh spinach
  • Fresh parsley for garnish

Instructions

  1. Heat olive oil in a large pot over medium heat.
  2. Add chopped onions and minced garlic, sauté until translucent.
  3. Stir in diced tomatoes and let simmer for 5 minutes.
  4. Add chickpeas and vegetable broth, bring to a boil.
  5. Season with cumin, paprika, salt, and pepper.
  6. Reduce heat and add spinach, cooking until wilted.
