Hearty Chicken & Barley Comfort Soup

Ingredients

  • 1 tablespoon olive oil
  • 1 onion, diced
  • 1 carrot, chopped
  • 1 celery stalk, chopped
  • 1 cup pearl barley
  • 6 cups chicken broth
  • 2 cups cooked chicken, shredded
  • Salt to taste
  • Pepper to taste
  • Fresh parsley for garnish

Instructions

  1. In a large pot, heat 1 tablespoon of olive oil over medium heat.
  2. Add 1 diced onion, 1 chopped carrot, and 1 chopped celery stalk. Cook until softened, about 5 minutes.
  3. Stir in 1 cup of uncooked pearl barley and toast for 2-3 minutes.
  4. Pour in 6 cups of chicken broth and add 2 cups of shredded cooked chicken.
  5. Bring to a boil, then reduce the heat and let simmer for 30 minutes.
  6. Season with salt, pepper, and fresh parsley to taste before serving.
