Ingredients

  • 1 head cauliflower
  • 1 can white beans (425g)
  • 2 cups vegetable broth
  • 2 tablespoons olive oil
  • Salt, to taste
  • Pepper, to taste
  • Fresh herbs (like parsley or thyme) for garnish

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Chop one head of cauliflower into florets and spread them out on a baking sheet.
  3. Drizzle the cauliflower with olive oil, salt, and pepper; toss to coat.
  4. Roast the cauliflower in the preheated oven for about 25 minutes or until golden brown.
  5. In a saucepan, combine one can of drained and rinsed white beans, vegetable broth (about 2 cups), and the roasted cauliflower.
  6. Bring the mixture to a simmer over medium heat, cooking for an additional 5 minutes.
