Ingredients

  • 1 medium cauliflower (about 500g)
  • 2 tablespoons fresh ginger, grated
  • 400ml coconut milk
  • 1 medium onion, chopped
  • 2 cloves garlic, minced
  • 500ml vegetable broth
  • 2 tablespoons olive oil
  • Salt and pepper to taste

Instructions

  1. Gather all ingredients: cauliflower, fresh ginger, coconut milk, onion, garlic, vegetable broth, olive oil, salt, and pepper.
  2. Begin by heating olive oil in a large pot over medium heat.
