Creamy Cashew Mushroom & Thyme Soup

Ingredients

  • 1 cup cashews
  • 250 grams mushrooms
  • 1 tablespoon olive oil
  • 1 small onion
  • 2 garlic cloves
  • 4 cups vegetable broth
  • 1 teaspoon fresh thyme
  • Salt and pepper to taste

Instructions

  1. Soak 1 cup of cashews in water for at least 4 hours or overnight, then drain.
  2. In a pot, heat 1 tablespoon of olive oil over medium heat.
  3. Add 250 grams of sliced mushrooms and sauté until browned, about 5-7 minutes.
  4. Stir in 1 small diced onion and 2 minced garlic cloves; cook until translucent.
  5. Add 4 cups of vegetable broth and 1 teaspoon of fresh thyme leaves.
  6. Bring to a boil and then reduce to simmer for 15 minutes.
  7. Add the soaked cashews and blend the soup with an immersion blender until smooth.
  8. Season with salt and pepper to taste, then warm over low heat if necessary.
  9. Serve hot, garnished with additional sautéed mushrooms and a drizzle of cashew cream.
